Butterscotch Squares


Preheat oven to 350​o F.
Grease a 9" X 13" X 2" baking dish.

In a large mixing bowl, cream butter and sugar until fluffy.
Add vanilla extract and eggs, mixing well.
Lightly spoon flour into measuring cup and level off.
In a smaill bowl, combine flour, baking powder and salt.
Stir dry ingredients and nuts into sugar mixture until well combined.  Batter will be very thick.
Spread into prepared baking dish.
Bake at 350o F for 20 - 30 minutes just until top is golden brown (overcooking makes them hard.)

When cool, sprinkle with confectioners sugar and cut into squares.

Store in airtight container.

Serves about 30.


  • 1/2 cup butter, softened
  • 1 3/4 cup firmly packed brown sugar
  • 2 tsp. vanilla extract
  • 2 XL eggs
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped walnuts
  • Confectioners sugar
