Peach Pecan Cake

INGREDIENTS

  • 3 XL eggs
  • 1 3/4 cups sugar
  • 3/4 cup vegetable oil
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp cinnamon
  • 2 cups fresh peaches, peeled, pitted and sliced 
​OR
  • 1 - 24.5 oz. can peaches, drained and coarsely chopped
  • 1/2 cuo chopped pecans
  • Confectioners sugar

DIRECTIONS

Preheat oven to 375​o F.
Grease and flour (or spray) 9" X 13" X 2" cake pan.

In a large mixing bowl, combine all ingredients and mix thoroughly by hand. Batter will be thick.

Spread into prepared cake pan.

Bake at 375o F for 50 - 60 minutes until top is brown and toothpick inserted in center comes out clean.

Sprinkle with confectioners sugar when cool.

Serves 24.
